A note from the founder

A pastry school should feel like a professional kitchen, not a classroom.

Most people who want to bake for a living are taught to follow recipes. Very few are taught why a recipe works, or what to do at seven in the morning when it doesn't.

La Couronne Patisserie was built around a single decision: keep the cohorts small enough that a chef can stand at every student's bench, every day. Sixteen stations, one chef, one commis. Nothing is demonstrated to a room of forty and then never practised.

The syllabus is classical because classical technique transfers. A student who can laminate properly, temper chocolate reliably and balance a cream by taste can work in a hotel, a patisserie, a restaurant pass, or their own shop. Trend-led teaching ages within two seasons; fundamentals do not.

We assess under time, on the pass, the way service does. It is harder than most programmes. Graduates tell us it is the reason their first job did not overwhelm them.

The method

You cannot learn pastry by watching.

Every session is hands-on at a full station. Recipes are demonstrated once, then produced by each student, tasted, corrected and repeated until the result is consistent. Written technique notes are yours to keep.

01
Demonstration and tasting
Chef produces the item start to finish, at speed, with commentary.
02
Individual production at station
Every student makes the full recipe alone. No group work.
03
Chef critique, written correction
Texture, taste, structure and finish, noted in your technique book.
04
Assessed repeat under time
Graded on the pass, to service timings, without notes.

Questions we are asked

Before you apply

Anything not answered here, the admissions chef will cover in your application call.

Do I need prior kitchen experience?
No. Roughly half of each cohort has never worked in a professional kitchen. What we do ask for is availability — the programme is full-time, five days a week.
Is the fee payable in instalments?
Yes, in three instalments across the programme. Education-loan documentation is provided on request.
What is included in the fee?
All ingredients, two sets of chef whites, knife and small-tool kit, technique manuals, and the assessment and certification fee. Accommodation is not included.
Is the certificate recognised?
Each certificate carries a serial number and QR code and can be verified on this site by any employer, permanently.
Can I visit before applying?
Yes, and we recommend it. Campus visits run twice a week and include a kitchen walk-through during a live class.
A day here

Eight hours on your feet, five days a week.

We are direct about this because it is the most common reason people withdraw. The programme is physical work at professional pace, not an enrichment course.

7:30
Arrival, whites and mise en place
Station set, weights out, ovens on. Chefs check uniform and nails before anyone touches product.
8:00
Demonstration
The chef produces the day's item start to finish at service speed, talking through every decision. You taste it.
9:00
Production
You make it yourself, alone, at your own station. The chef moves between sixteen benches correcting as you work.
12:30
Family lunch
Cooked by the cuisine cohort, eaten together. Forty minutes, and the only part of the day that is not assessed.
13:15
Tasting and critique
Every student's work is cut, tasted and discussed in front of the group. Praise is specific and so is criticism.
14:00
Second production or theory
Either a repeat under time, or an hour on ratio, food science, costing or ingredient sourcing.
15:30
Clean down and notes
Stations broken down to inspection standard, and your technique book written up before you leave.

Honestly

Is this the right school for you?

We would rather you decide now than in month three. Two honest lists.

Yes, if

—You intend to work in a kitchen, run a section, or open your own place, and you want the technique to hold up under pressure
—You can commit to five full days a week for six months without a job on the side
—You want to be corrected daily, in front of others, and you can take it without it flattening you
—You are changing careers and would rather do it once, properly, than in stages

Probably not, if

—You want to bake better at home for family and friends — our short courses are a far better use of your money
—You need to keep working while you study. Look at a weekend certificate elsewhere; ours cannot be done part time
—You are looking for a qualification to frame rather than a trade to practise
—The fee would require borrowing more than you could repay on a commis salary. Talk to us; we will say so plainly

Choosing

Which programme, and why it matters

People usually arrive wanting the longest programme and leave the conversation with a shorter one, or the reverse. It depends entirely on what you intend to do afterwards.

If you want to work in a hotel or restaurant

The six-month diploma combines food science, pastry, chocolate and entrepreneurship across 24 modules.

If you want to run a pastry section

The six-week certificate covers 16 core modules in professional egg-free baking and pastry.

If you want to open a bakery

The six-month diploma includes production skills, entrepreneurship, menu planning and budgeting.

If you already work in a kitchen

Tell us at application. We occasionally let experienced commis skip the foundation weeks and join at term two, subject to a practical trial. It reduces the fee proportionally.

If you are not sure yet

Do a short course first. Three days in our kitchen will tell you more about whether this is your trade than any brochure, and the fee is credited against a diploma if you enrol within a year.

Entry

What we ask of applicants

Assessment

Graded the way service grades you.

There is no written final. Each term ends with production under time, judged on taste, texture, structure, finish and waste. The final service is judged by chefs from outside the academy.

Grades are awarded as Pass, Merit or Distinction and printed on your certificate. Every certificate carries a serial number and a QR code an employer can verify on this site.

Celebration cake with chocolate finishing
Celebration cakes & finishing
How you are graded

The five criteria, every time

The same five headings are used from week four to the final service, so you always know what a chef is looking at when they taste your work.

CriterionWhat the chef is judgingWeight
TasteBalance of sweetness, acidity, salt and fat. Whether the dominant flavour is the one intended.30%
TextureCrumb, set, aeration, snap. Whether it eats the way the item is supposed to eat.25%
StructureWhether it holds — a clean section, a stable mousse, a base that does not go soft by service.20%
FinishGlaze, edges, consistency across a batch of twelve. Sixteen identical items, not one good one.15%
WasteTrim, scrapings, over-ordering, spoilage. What your station cost to run.10%

Pass

Competent and safe. The item would go out of a kitchen without a chef stopping it.

Merit

Consistent across the batch and to time, with finish a customer would notice approvingly.

Distinction

Work a head chef would put on a menu unchanged. Roughly one in five students, some terms none.

Paying for it

An honest word about the fee

Here is what the programme fee covers, and what to consider when planning your budget.

Where the fee goes

Sixteen stations means one chef teaches sixteen people, not sixty. Ingredients for four hundred practised items are consumed, not demonstrated. That ratio is the cost.

What a first job pays

A commis in a good kitchen starts modestly. Repayment is realistic over three to four years, faster if you move into a sous role or open your own place. We will run the numbers with you.

When to choose otherwise

Compare programme fees and duration with admissions before deciding which course suits your budget.

Living here

Coming from outside Chandigarh

Accommodation

We do not run a hostel. The office keeps a vetted list of paying-guest accommodation within four kilometres, ₹12,000–22,000 a month.

Cohort housing

Most out-of-town students share a flat with two or three classmates. We introduce you before term starts so you can arrange it.

Meals

Lunch is cooked and eaten together at the academy every teaching day, included in the fee.

Visas

International applicants: we issue the admission letter required for a student visa once the first instalment clears.

The Patisserie

A small school, on purpose.

Sixty-four students at any one time, across four kitchens. We have no plans to grow past that.

Why we exist

Indian kitchens hire faster than Indian schools can train.

Hotels, patisseries and restaurants across the country are opening pastry sections and cannot staff them. At the same time, a great many people finish a three-month course able to reproduce a dozen recipes and no more, and find that their first professional week undoes their confidence.

La Couronne Patisserie was founded to close that gap in one direction only: fewer students, longer programmes, harder assessment. We would rather graduate sixteen people a year who can walk into a section than a hundred who cannot.

Everything about the academy follows from that decision — the station count, the chef-to-student ratio, the equipment list, the fee.

Technique before style

Trends change every season. Ratio, structure and temperature do not.

Every student, every day

A chef stands at your bench and tastes your work daily. No exceptions.

Assessed honestly

A grade means something because it is possible not to get one.

Standards

What we hold ourselves to

1:16
One chef to sixteen students in every practical session. Never a demonstration to a lecture hall.
100%
Individual production. Every student makes every recipe themselves, start to finish.
4
Separate kitchens, so bread, chocolate, pastry and cuisine never share equipment or temperature.
External
Final assessments judged by chefs who do not teach here, so a grade is not self-awarded.
Who studies here

A cohort that is deliberately mixed

We do not select for youth or for prior experience. A twenty-year-old straight from school and a forty-five-year-old leaving a corporate job learn faster next to each other than either would in a room of peers.

Where our ingredients come from

You cannot teach technique on bad butter

Ingredient quality is a teaching decision, not a purchasing one. If the chocolate behaves unpredictably, a student learns nothing from a failed temper.

Couverture

Single-origin and blended couverture at professional cocoa percentages. Students temper the same chocolate they will use in a paying kitchen.

Flour and dairy

Indian flours tested for protein and behaviour, and cultured butter at 82% fat. We teach what is actually available to buy here, not what a French textbook assumes.

Fruit and seasonality

Bought weekly from the market rather than frozen year-round, so students learn to build a menu around what is good this month.

See it during a live class

Campus visits run twice a week and include a kitchen walk-through while students are working.

Professional equipment. Hands-on production. Continuous guidance.

Standards

Cleaned to inspection standard, every day

Students break down their own stations. Not as a chore, but because a chef who cannot leave a bench clean will not last in a professional brigade.

Temperatures are logged twice daily, allergens are stored separately, and the kitchens are audited by an external food-safety consultant each quarter. Every student completes HACCP certification in the first four weeks.
